  • 1½ tsp vegetable oil, divided

  • 1 tsp garlic powder  

  • ½ tsp smoked paprika  

  • ¼ tsp onion powder

  • 1½ lbs. chicken breast or tenderloins  

  • 4 cups cauliflower rice

How to Make Copycat Chipotle Chicken 


This recipe comes together in just a few simple steps: 

  1. Start by making your marinade. In a resealable plastic bag or medium bowl, combine the chipotle, vegetable oil, cumin, oregano, garlic powder, smoked paprika, onion powder and salt. Mix everything together until well blended. 

  2. Add the chicken to the bag or bowl and toss to coat it thoroughly. Let it marinate for at least 15 minutes — or overnight if you want even deeper flavor. 

  3. While the chicken marinates, prepare the cauliflower rice. Microwave or steam it according to the package instructions, then stir in the cilantro and lime juice. Set it aside until it’s time to build your bowls. 

  4. Heat a large nonstick skillet or grill pan over medium-high heat and lightly coat it with cooking spray. 

  5. Add the sliced peppers to the hot pan and sauté until they’re nicely charred and tender, about 5 minutes. Transfer them to a plate and set aside. 

  6. Add the marinated chicken to the same skillet. Sauté for about 15 minutes, turning every few minutes so the spices don’t burn, until the chicken reaches an internal temperature of 165°F. Remove from the heat and let it rest for a few minutes before chopping it into cubes. 

  7. When you’re ready to assemble, start with 1 cup of cauliflower rice in a shallow bowl or plate. Top with 4 ounces of the chopped chicken, ¼ cup of the grilled peppers, ¼ cup of romaine, 2 tablespoons of chopped tomatoes, and 2 tablespoons of shredded Monterey Jack cheese. Finish with a 1tablespoon dollop of guacamole and a lime wedge. Repeat the process for the remaining servings.
