  • 12 oz. fresh or canned salmon (boneless)

  • 2 slices whole grain bread

  • 1 lemon, zested and juiced (about 4 tbsp juice), divided

  • 4 tbsp fresh dill, divided

  • ½ tsp onion powder

  • 2 tbsp olive oil

  • ¼ tsp garlic powder


For the Salad & Sauce:

  • ¼ cup low-fat Greek yogurt

  • 1½ cup sliced cucumbers

  • 1½ cup tomato wedges, halved

  • 1½ cup chopped green peppers

  • 12 whole grain crackers


Step-by-Step Instructions



Making these salmon balls is easier than you think. In just about 30 minutes, you’ll have a golden, crispy meal ready to enjoy.


  1. Prep the Breadcrumbs. Tear the whole grain bread into pieces and pulse in a food processor until it resembles coarse breadcrumbs. Transfer to a mixing bowl.

  2. Prep the Salmon. If using fresh salmon, chop it into chunks and pulse in the processor 6–8 times until it breaks down into pea-sized pieces. If using canned salmon, simply break it up with your hands (be sure to remove any bones).

  3. Mix and Shape. Add the salmon to the bowl with the breadcrumbs. Add half the lemon zest, 2 tablespoons of lemon juice, 2 tablespoons of dill and the onion powder. Gently mix until combined. Scoop out 2 tablespoons of the mixture at a time and roll into balls. You should get about 12 balls. Refrigerate for 10 minutes to help them set.

  4. Sear to Perfection. Heat the olive oil in a skillet over medium-high heat. Sear the salmon balls for 2–3 minutes per side until they are golden brown (about 4–6 minutes total). Transfer to a paper towel-lined plate.

  5. Make the Sauce. While the salmon cooks, combine the Greek yogurt, remaining lemon zest, 1 tablespoon of lemon juice, 1 tablespoon of dill and the garlic powder in a small bowl. Chill until ready to serve.

  6. Toss the Salad. In another bowl, combine the cucumbers, tomatoes and peppers. Toss with the remaining 1 tablespoon of lemon juice and remaining 1 tablespoon of dill.

  7. Serve and Enjoy. Plate 3 salmon balls with a dollop of yogurt sauce, a side of cucumber salad and 3 whole grain crackers.
